– ginger and oat soft bake cookies

These tasty ginger oat soft bakes are such a simple recipe, mildly spiced with ginger and no added sugar, they are the perfect first biscuit for baby led weaning or for lunchboxes.
200g rolled oats
100g plain flour
1 tsp bicarbonate of soda
3 tsp ground ginger
75ml of honey or maple syrup. (Honey should only be served to babies over 12 months old.
100g unsalted butter melted
1 tsp vanilla extract
90g 100% apple puree (baby pouch or homemade)
Preheat oven to 200•c fan
In a large mixing boel, add the oats, flour, bicarbonate of soda and ground ginger. Roughly mix until all combined.
Add the honey, melted butter, vanilla extract and apple puree to the oats and give it s good stir.
Take small amounts of the mixture in your hands and roll into gold ball sized shapes. Place onto a lined baking tray and gently press balls down to flatten.
Bake for 8-12 minutes until golden. The cookies will feel soft coming out the oven but will harden slighly as they cool.
Store in an airtight container for up to 5 days or freeze for up to 3 months.
