– vegetable popovers

These ‘popovers’ are great for using up leftovers and you can use any veg. A really handy lunchtime recipe!

Ingredients

120g Self-Raising Flour
60g Natural Yogurt
1 Egg
1/4 Green Pepper
1/4 Red onion
1/4 Tin of sweetcorn
1 dessert spoon Soft Cheese
1, finely chopped Mushroom
1/4 tsp Baking Powder

Method 👨‍🍳

Mix all ingredients together apart from the vegetables. It should make a fairly sticky mixture.
Fold the vegetables into the mixture.
Heat frying pan to a medium heat and add a small amount of olive oil.
Add a dollop of mixture to the pan and shape using a spatula.
Turn over when the mixture seems to be drying slightly on the top. Cook until golden brown (about 2-3 minutes per side).

    This looks fantastic! I always a few odds and ends of veggies left and this sounds like a great way to use them! How moist or dry did they turn out? I just made some cauliflower chickpea patties using up leftover cau and they turned out with the texture of baked falafel and were too dry for Pippin.
