– Tomato and basil mini loaves

These are unbelievably tasty, I would highly recommend for all of the family! They’re also incredibly soft and break up really easily making them the perfect food for BLW. (Luca ate all three! )🙊😆 Delicious warm or cool!

Make up a big batch and freeze the rest for later! If you don’t have a mini loaf tin, just use a muffin tin.

Ingredients

120g Self-Raising Flour
100g Cherry Tomatoes
50g Unsalted Butter
50g Courgette
30g Grated Cheddar
3 Eggs
A handful Fresh Basil
1 tsp Garlic Puree
A pinch Black Pepper

Method 👨‍🍳

Pre-heat the oven to 200°C (392°F). Lightly grease the mini loaf tin.
Finely chop the tomatoes.
Whisk in the eggs and grate in the courgette.
Gently fold in all other ingredients.
Fill the mini loaf tin equally.
Bake for 18 minutes.
