– simple tuna fish cakes
– side salad

A quick and nutritious lunch recipe. These are also lovely served with some natural yoghurt.

Ingredients

50g tinned tuna
50g courgette
1 spring onion finely chopped
100g mashed potato
1 egg
1 tbsp plain flour
A squeeze of lemon juice
1 tsp dried parsley
A pinch black pepper

Method 👨‍🍳

Grate the courgette into a bowl and squeeze out the water.

Drain the tuna well and add to the courgette.

Whisk in the egg and flour.

Add all other ingredients, mixing carefully.

Using a tablespoon to measure each fritter, dollop the mixture into a hot oiled pan. Cook on each side until browned, flipping and pressing with a spatula.
