– Salmon and veggie pasta

Essential omega 3 fatty acids found in oily fish such as salmon are so important for the development of your child’s brain, nervous system and vision. I try to include it on the menu twice a week. This is packed full of veggies and a great mid-week dish as you can prepare the tomato sauce in advance and then simply stir through the salmon before serving.

Ingredients

175g fusilli pasta
1 tbs olive oil
1 onion, chopped
50g red pepper, diced
A handful of tinned sweetcorn
5 asparagus stems chopped
1 clove garlic, crushed
1 x 400g tin chopped tomatoes
2 tsp sundried tomato paste
1 tbs balsamic vinegar
2 tbs fresh basil, chopped
25g parmesan, grated
2 salmon fillets, cooked

Cook the pasta in boiling water according to packet instructions.

Meanwhile, heat the oil in a saucepan. Add the onion, pepper and asparagus and fry for 5 minutes. Add the garlic and sauté for 10 seconds. Add the tomatoes, sundried tomato paste and balsamic vinegar. Cover and simmer for 5 minutes.

Drain the pasta, reserving 3 tbs of cooking water. Add the penne, cooked salmon, basil and Parmesan to the sauce. Stir together, adding the reserved cooking water.
