– mozzarella, tomato and basil savoury croissant

A quick and easy lunch to make and suitable for freezing which makes them perfect for a grab and go snack and for lunchboxes. The filling choices are endless!

Ingredients

1 sheet puff pastry
Tomatoes cut finely
Basil cut finely
Grated mozzarella
1 egg (beaten)

Method 👨‍🍳

Preheat oven to 190*c.

Using a pizza cutter, cut the puff pastry sheet lengthways in half and then again.

With two of the strips, cut into small triangle (in a zig zag) and larger triangles with the other two.

Place the smaller triangle on top of the larger one and flip over. Add filling of your choice (be careful not to overfill!).

Roll from the flat side of the triangle to the tip. Bend the sides up into a croissant shape and brush with egg wash.

Place on a lined baking tray and cook until golden and flakey. (Approx 15 mins).
