– cheesy courgette and avocado mini muffins
Really easy and only a few simple ingredients! These can be kept in the fridge for up to 3 days and can also be frozen. Mixture makes enough for 6 large muffins or 12 mini ones.
180g Gram Flour
60g Mature Cheddar
1 (small), grated Courgette
1 tsp Garlic Puree
A few leaves Fresh Basil
Pre-heat your oven to 200°C (400°F).
Grate the cheese and courgette and mash the avocado.
Mix everything together, adding the milk last. The mixture should be quite wet.
Grease your muffin tin using some butter, then spoon in the batter (alternatively you can use cake cases). Bake for 20 minutes.
Leave to cool slightly before removing from the tin. Enjoy warm or cool.
