– cheese and tomato crumpet muffins.

Ok, these are incredible!! 🤤 With only 5 ingredients, you can be make these in literally no time at all. Great for baby led weaning and lunchboxes.

❄️ Suitable for freezing – defrost at room temp or in fridge.
👶 Ingredients suitable from 6 months.
🥵 🥶 Can be eaten warm or cold.

Ingredients

2 crumpets (I used sourdough)
2 spring onions
6 cherry tomatoes
3 eggs
Handful of grated chedder

Method 👨‍🍳

Heat oven to 180c

Tear up the crumpets and divide between 6 greased muffin tins.

Chop the tomatoes and spring onions and sprinkle on top.

Sprinkle cheese over the top of each one.

Beat the eggs in a bowl and pour a small amount into each one.

Bake in the oven for 25 mins and leave to cool slighly before popping them out.

I served along side some homemade guacamole. 🥑
