– Peanut butter pikelets

Really simple to make, these pikelets are great for hungry, growing babies. They are delicious served straight from the pan or toasted and spread with a little fruit puree. Today I served these with fresh fruit and natural yoghurt. ☺️

Ingredients

100g Self-Raising Flour
3 tbsp Peanut Butter
3 tbsp Greek Yogurt
100ml Apple or Grape Juice
1 Egg

Method 👨‍🍳

Whisk the egg into the flour.

Stir in the peanut butter, the yoghurt and juice.

Heat a little oil in a frying pan. Once the pan is hot, dollop in small spoonfuls of the mixture.

Turn down to a medium heat. Watch as little bubbles form all over the pikelets.

Once the pikelet has ‘bubbled’ all the way to the centre (this usually takes around 1 1/2 to 2 minutes) flip and cook on the other side until brown.
