– blueberry and oat breakfast muffins

These tasty blueberry muffins are quick and easy to make and great for breakfast. They freeze brilliantly and don’t crumble. They’re also perfect for baby led weaning! Recipe makes 9 muffins.

Ingredients

80g Blueberries
80g Self-Raising Flour
20g Coconut Oil
1 Egg
20g Desiccated Coconut
35g Oats
80g Fruit Puree

Method 👨‍🍳

Preheat the oven to 200°C (390°F). Line a muffin tin with cases.

Roughly mash the blueberries in a mixing bowl.

Whisk an egg in the same bowl as the berries.

Sift the flour into a mixing bowl. Add the oats and the dessicated coconut.

Add the blueberries, fruit puree, coconut oil and egg into the mixing bowl and combine.

Spoon into muffin cases and bake for around 20 minutes, until slightly crisp on top. Leave to cool before serving.
