– baked weetabix mini bites with fresh fruit
150ml of any full fat milk
2 medium eggs
2 bananas mashed
1 tsp vanilla extract
1 tsp cinnamon
Pinch of ground nutmeg
1 tsp baking powder
1 tsp date syrup (optional)
Toppings of your choice
Preheat oven to 180 and grease a 24 whole mini muffin tray.
In a bowl, soak the weetabix in the milk until they become mushy.
Add the eggs, mashed bananas, date syrup and villa extract and stir well.
Add spices and baking powder to the mixture and stir well.
Divide between muffin tray and roo with chosen topping.
Bake for 30 mins and serve once cooled.
(Can be frozen or store in an airtight container in the fridge).
